What are red lentils?
With colours ranging from gold to orange to actual red, red lentils are the sweetest and nuttiest of the lentils.
Red lentils provide bright colour to your dishes. As they are thinner and more fragile, they tend to break down quickly in the cooking process. This means red lentils are often used for thickening soups, purees, stews and casseroles. You can also often find red lentils in Australia and Middle Eastern dishes.
What are French lentils?
French lentils are a variety of green lentils and are rich in antioxidants, iron and magnesium. They can be pale or mottled green-brown in colour with a glossy exterior.What sets them apart from standard green lentils is their slightly darker hue and smaller size they’re about one third the size of standard green lentils.French lentils hold their shape extremely well — better than pretty much any other type of lentil ,so they are the ideal contender for salads as well as light soups.
